Sometimes, and it is rarely the better job. It only works where the existing tiles are firmly bonded, flat and the extra thickness does not cause problems at doors, thresholds or around fixtures. Otherwise the old tiles come off and the wall or floor gets made good first. Tiling onto something you are not sure of means the new tiles fail with the old ones, and then you are paying twice.

Tile adhesive and grout are not a waterproof layer, they are a decorative finish, so what keeps water out of the wall behind is the tanking membrane under them. It is a small part of the cost of a bathroom and it is the part that prevents a ceiling coming down downstairs in three years.
It is worth thinking about, because the grout is what you see. Matching the tile makes a floor read as one surface, contrasting makes a pattern out of metro tiles. Yes. Matching a discontinued tile is the hard part, and if you have spares from the original job, dig them out. When a floor has several loose tiles in one area it usually means movement or a failed substrate under them, and replacing the tiles alone puts you back in the same position in a year.
